Beef For Sale by the Side or By the Whole – May 2025 Pickup
$7.50 Per Pound Based on the Hanging Weight
This price includes custom cutting and wrapping by our processor, but does not include VA State sales tax of 5.3%. Boneless Cuts add $12.
Our Story
We produce finished beef for sale by the side, or 1/2 of an Angus or Black Baldy steer that has been raised on grass pastures and grain finished. Whitehall Farm has been family owned and operated for over 75 years, raising around 100 plus calves and making our own hay on property. We have been finishing beef as an employee benefit for over 50 years and about 5 years ago we started offering our finished beef to the public. The grain we feed is made by our local farmers cooperative with locally sourced ingredients.
Each year we pick the best steers and hold them over for another year, grazing on open pastures. In December, we take selected steers and give them an additional grain supplement for a few months while on premium hay we make ourselves to finish the beef. In late April those steers are are transported to a local butcher where the beef’s are dry aged for two weeks, processed and packaged to the buyer’s specifications, so you get the cuts the way you like. Steaks, roasts, lots of ground beef and more.
The Processing
We price our beef based on the hanging weight at the time of delivery to the processor. So if a whole steer weighs 800 lbs at the hanging weight, the beef would be 400 lbs on the side (half of the animal). The sides of beef are dry aged for 2 weeks before being custom processed based on the cut sheet you complete, ensuring the beef is prepared just as you would like it. A half steer can yield around 65% of the hanging weight, the difference because there is lost material in the bones and excess fat. Some of that depends on the types of cuts you select. The final product is wrapped in butcher paper and plastic wrap and the take home weight will be 250+lbs (based on a 400lb side), depending on the cuts you select. You complete a cut sheet for us, which indicates the various cuts of beef you wish to receive. We include all processing costs in the price per lb.
All beef is inspected by Virginia State Health Inspector during processing.
Pricing has been set at $7.50/ pound plus VA sales tax. That price does include the custom cutting and wrapping fees. There is a $12 added cost for boneless cuts.

What to Know About Beef from
Whitehall Farm
A 400 lb, half side of beef, typically yields around 220 pounds of meat, including both ground beef and a variety of cuts like steaks, roasts, and ribs. You can expect approx. 45-60 individual cuts of steaks and roasts, depending on the specific cuts and size of the beef.
One side of beef will yield approximately the following:
- A side of beef is made up of a front quarter (including chuck roasts, brisket, and rib steaks) and a hind quarter (including Sirloins, T-bones, and Filets).
- Ground Beef: About 125 pounds of ground beef, ground to your preference, such as 80/ 20 or 90/10 (lean).
- Steaks: Bone-In expect a mix of Sirloin, T-bone, Porterhouse, and Bone-In Ribeye. (Boneless expect Sirloin, Filet Mignon, and Delmonico steaks. There is a nominal additional charge for Boneless Cuts.)
- Roasts: You’ll receive roasts like Chuck, Sirloin Tip, Bottom Round and Rump.
- Don’t Forget The: Brisket (can be cut in two), Ribs, Flank or Skirt Steak, and Stew Meat.
- Other Items: Always an option is to get the Soup Bones, Ox Tail, Heart, Tongue, Liver, Kidneys, Marrow Bones, Hanging Tender, Tallow Fat and Beef Fat, any of which can be included should you desire.
